Basil Simple Syrup

Fresh basil simple syrup made by steeping basil leaves in warm sugar syrup for a clean, herbaceous flavor; perfect for cocktails, lemonade, and more.

Ingredients
  

  • ½ cup (99g) granulated sugar
  • ½ cup (125ml) water
  • 1 cup (28g) packed fresh basil leaves (about 25)

Instructions
 

  • Place sugar and water in a small saucepan. Set over low heat and stir until the sugar has fully dissolved.
  • Remove from heat and add the basil leaves, clapping them between your hands first to release their oils. Gently muddle them into the syrup.
  • Let the mixture sit for 15 minutes to allow the basil to fully infuse.
  • Once cooled, pour the simple syrup through a fine-mesh sieve set over a glass measuring cup.
  • Discard the basil leaves, then transfer the syrup to a jar with a tight-fitting lid and refrigerate until needed.

Notes:

You don’t need to boil the sugar solution; keep it on low heat just until the sugar has fully dissolved.
