Melt 1 tablespoon butter in a large 15-inch skillet over medium heat until foamy. Add the panko and cook, stirring frequently, until golden brown, about 3 minutes. Remove from heat just as it begins to turn golden brown, as it will continue to cook off heat.
Transfer the panko to a small bowl and set aside. Wipe the skillet clean.
Prepare the Salmon
Pat the salmon dry with paper towels and lightly sprinkle the tops with 1/2 teaspoon salt. Let stand for 10 minutes.
While the Salmon Brines
In a small bowl, combine the smoked paprika, onion, black pepper, salt, granulated garlic, cayenne, and thyme.

Continue cooking undisturbed until the thickest part of the salmon registers 125°F on an instant-read thermometer (about 2–3 minutes more).
Transfer the salmon fillets to a platter, skin-side down, and let rest while you assemble the salad.
Assemble the Caesar Salad
Place the prepared romaine in a large mixing bowl and add 3/4 cup of the Caesar dressing. Toss until evenly coated, adding more dressing if desired.
Divide the salad among four pasta bowls and top each with a salmon fillet.
Garnish with the crispy Parmesan-panko topping, if desired, and Parmesan cheese.
