- Loaf of sourdough bread unsliced
- 4 teaspoons olive oil divided
- ½ teaspoon kosher salt
- 6 tablespoons finely grated Gouda cheese
- 2 tablespoons freshly grated Parmesan finely grated
Depending on the loaf size, cut 3 to 5 (1-inch) thick slices of sourdough bread. Remove the crusts and cut into 1-inch cubes to measure 4 cups (about 147g).
Place the cubes in a large bowl or zippered freezer bag. Drizzle with 2 teaspoons olive oil and sprinkle with salt. Gently toss with a silicone spatula or seal and shake the bag. Add the remaining 2 teaspoons of oil and toss or shake again.
Arrange the cubes in a single layer in the air-fryer basket, leaving space between them. Work in batches, if needed.
Set the air fryer to 275°F and air-fry for 10 minutes, until crisp.
Combine the grated Gouda and Parmesan. Position the cubes closer together in the air fryer and sprinkle half of the cheese blend evenly over the bread, reserving the remainder.
Increase the temperature to 325°F and air-fry for 5 minutes. Gently turn the cubes and sprinkle with the remaining cheese.
Cook for approximately 5 minutes more, until the cheese is melted and golden.
Let cool slightly, then add to soup or salad, or enjoy as a snack.
A note on kosher salt: This recipe uses Diamond Crystal Kosher Salt. If you’re using Morton's Kosher Salt or table salt, start with less and adjust to taste. Diamond Crystal kosher salt has larger, airier crystals that take up more space, so a teaspoon of kosher salt actually contains less salt by weight than other types of salt.
For less cleanup, use an air-fryer liner during the cheese stage to catch melted cheese that would otherwise fall through the basket, if your appliance’s manufacturer permits it. Keep it secured beneath the bread, and never preheat with loose parchment.
Smaller cubes cook faster: If you cut your bread into smaller cubes, reduce the initial air-frying time and check them early for crispness.
