Greek Yogurt Dill Dip (Plus Sauce and Marinade)

- 1 small garlic clove finely minced or grated
- 1 teaspoon kosher salt
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon finely minced shallot
- 1 tablespoon fresh lemon juice
- 1 pinch cayenne pepper
- 1½ cups (340g) plain Greek yogurt preferably full-fat
- 2 tablespoons finely chopped fresh dill
Add the minced garlic and kosher salt to a medium bowl. Mash them together with the back of a spoon until the garlic forms a rough paste.
Add the olive oil, shallot, lemon juice, and cayenne pepper. Whisk until combined.
Stir in the Greek yogurt and dill.
Cover and refrigerate for 20 minutes to allow the flavors to blend.
Stir, taste, and adjust the salt if needed.
Serve as a dip, use as a marinade, or spoon it over grilled fish or meats.
A note on kosher salt: This recipe uses Diamond Crystal Kosher Salt. If you’re using Morton's Kosher Salt or table salt, use half the amount. Diamond Crystal kosher salt has larger, airier crystals that take up more space, so a teaspoon of kosher salt actually contains less salt by weight than other types of salt.
If you don't have cayenne pepper, you can substitute 1/2 teaspoon freshly ground black pepper instead.
You can substitute 1 teaspoon dried dill for the 2 tablespoons fresh dill.
The flavors of this dip intensify over time, so wait about 20 minutes before adding any extra salt or dried dill (if using).
Full-fat Greek yogurt creates the richest, thickest dip. A 2% yogurt will also work well.
