A hearty, tomato-based red lentil stew with curry powder, garam masala, and the lingering warmth of ginger. Serve with coconut cream, basmati rice, and warm naan.
Heat the oil in a large Dutch oven set over medium-high heat.
Add onions, carrots, and celery, and cook until the onions are translucent, about 3-5 minutes.
Add the ginger, garlic, salt, curry powder, and cayenne. Cook, stirring, until fragrant, about 2 minutes.
Add the whole tomatoes and their juices and bring the mixture to a boil.
Reduce heat to medium, cover, and gently simmer until the carrots are soft, about 45-50 minutes.
Use an immersion blender to blend the tomato mixture right in the Dutch oven until smooth. You can also carefully transfer the mixture to a regular blender and blend until smooth, being careful as the mixture will be very hot. Once smooth, return it to the Dutch oven.
Add the lentils and 1 cup water. Simmer for 45–50 minutes, stirring occasionally so the lentils don’t stick to the bottom. The lentils are done when completely tender, with no firm bite.
Adjust the consistency. Once the lentils are fully cooked, add ¼ cup more water at a time, if needed, until the stew reaches your preferred consistency.
Stir in the garam masala and adjust the salt to taste.
Spoon into bowls and top with coconut cream, cilantro, and julienned ginger, if desired. Serve with basmati rice and warm naan on the side.
