Air Fryer Peaches with Cinnamon Butter

These Air Fryer Peaches are jammy, soft, and boast a warm depth of flavor thanks to the buttery, brown sugar, and cinnamon glaze they are basted in. Take advantage of the season's first batch of peaches and make this simple and delicious recipe. They taste like the best part of a peach cobbler, but without the gluten.

Ingredients
  

  • 2 slightly soft peaches room temperature
  • ¼ cup unsalted butter melted
  • 2 tablespoons brown sugar
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon ground cinnamon
  • 1-2 tablespoons crushed pistachios

Instructions
 

  • In a small bowl, combine the melted butter, brown sugar, vanilla extract, and cinnamon to make the glaze.
  • Cut the peaches in half (along their spine) and twist the halves to remove them from the pit.
  • Brush the glaze over each of the cut peach halves, letting it pool in the center of the peach.
  • Place the peach halves in the basket of an air fryer (it does not need to be preheated).
  • Air fry at 350°F for 12-15 minutes, basting with more glaze halfway through.
  • Once the tops of the peaches look caramelized and are soft, remove them from the basket and place them on individual plates. Brush them with more glaze and sprinkle the crushed pistachios on top.
  • Serve the peaches while still warm, topping with vanilla ice cream, additional crushed pistachios and drizzle of glaze, if desired.

Notes:

The nutritional information for the air-fried peaches does not include the addition of vanilla ice cream or other toppings.
If possible, choose Freestone peaches; they are the easiest to pit and halve.
For the best caramelized peaches, start with room-temperature fruit. 
No need to preheat the air fryer; this is a gentle bake to soften, (not crisp) the peach halves. 
Either salted or unsalted pistachios are fine, whichever you prefer.
Handle carefully after cooking — the air fried peaches will be very delicate.
Best enjoyed when peaches are in season (mid to late summer) for maximum flavor.

Storage: Keep leftovers in an airtight container in the fridge for up to 4 days. Reheat gently in the microwave and drizzle with any saved glaze to revive.
Freezing: Not recommended, as it ruins the soft, jammy texture of caramelized peaches.
