  • French Fries: I used crinkle-cut fries, but any sturdy fry that can hold up under the cheese sauce and toppings works well, such as steak fries or waffle fries.
  • Sharp Cheddar Cheese: Avoid pre-shredded cheese and grate your own, it will have a better texture when melted.
  • Evaporated Milk & Cornstarch: The secret ingredients to making a creamy, pourable cheese sauce that won’t separate.
  • Hot Sauce: Use whatever you have on hand; I used Frank’s RedHot Sauce.
  • Sour Cream: Mixed with a touch of sugar and salt, it adds a cool, creamy contrast to the bacon and cheese.

How to Make Loaded Fries at Home

Here’s how to make loaded fries that are crispy enough to hold the toppings, finished with a smooth cheese sauce and classic bacon, sour cream, and fresh garnishes

1. Mix the sour cream, sugar, and salt until smooth, then set aside.
2. Toss the grated cheddar with cornstarch in a saucepan and add the evaporated milk.

3. Stir in the hot sauce and salt.
4. Cook, stirring frequently until the cheese sauce is smooth and slightly thickened.

Ingredients
  

  • 32 ounce bag (907g) frozen crinkle-cut French fries
  • cup (76g) full-fat sour cream
  • ½ teaspoon granulated sugar
  • Kosher salt
  • 8 ounce block cheddar cheese grated
  • 1 tablespoon cornstarch
  • 5 ounce can (147ml) evaporated milk
  • 2 teaspoons hot sauce such as Frank’s Red Hot
  • ¾ cup chopped pre-cooked bacon about 10-12 slices
  • ¼ cup (28g) sliced green onions about 2 green onions
  • 1 jalapeño thinly sliced (optional)

Instructions
 

Cook the fries:

  • Place the French fries in a single layer on a baking sheet and cook according to package directions, adding a couple of extra minutes more until crispy and golden.
  • About halfway through baking, turn the fries to so they crisp evenly on all sides. The fries should be extra crispy so they can hold the toppings without getting soggy.
  • Make the sour cream mixture:
  • In a small bowl, combine the sour cream, sugar, and ¼ teaspoon salt. Stir until smooth and set aside.

Make the homemade cheese sauce for fries:

  • Toss the grated cheddar with the cornstarch, then transfer it to a medium saucepan set over medium-low heat.
  • Add the evaporated milk and stir until the cheese is fully melted and smooth, about 5 minutes.
  • Stir in the hot sauce and ¼ teaspoon salt, then remove from heat. The sauce should be thick but pourable; it will continue to thicken slightly as it cools.

Assemble the loaded fries:

  • Remove the fries from the oven and scatter half of the bacon and green onions evenly over them.
  • Drizzle the fries with ½ cup cheese sauce and spoon the sour cream mixture over the top.
  • Finish with the remaining bacon bits and green onions.
  • Garnish with jalapeño slices if desired and serve while hot.

Notes

Line the baking sheet with parchment paper for easier clean up.
Extra-crispy fries are key, so they don’t soften under the weight of the toppings.
If the cheese sauce becomes too thick to drizzle, stir in 1-2 tablespoons of milk to thin it out.
If you have a smaller baking sheet, you can repeat the layering process to create a double layer of fries.
